FANTASTIC SPINACH BARS!
Great as party finger-food!

2 T. melted butter
1 c. flour
1 tsp. baking powder
¾ tsp. salt
½ tsp. crushed oregano leaves
¼ tsp. basil leaves
¼ tsp. thyme leaves
¼ tsp. lemon pepper
3 large eggs
1 c. milk
2 pkgs. Thawed frozen spinach (chopped style) with water
squeezed out
2 cups (8 oz) shredded cheddar
2 cups (8 oz) shredded Jack or Mozzarella cheese
4-6 oz. crumbled Feta cheese
1 chopped onion
3-4 minced garlic cloves
1 red bell pepper for topping
Top with chopped red bell peppers pressing them
into the mixture a little.
Bake uncovered at 360* for 35-45 min. or until a toothpick
inserted near the center comes out clean. Cut into squares to
serve.
13in x 9in baking dish, slightly oiled
Serves approximately 16
