Great for spring!

Lamb Al Forno

2 lbs oneless lamb
2 or 3 tbs of Pure Lard
3/4/ cup white wine
¼ cup water
2 tbs good wine vinegar
1 garlic clove
A couple of anchovies - drained
Rosemary, salt, pepper
Parsley

Cut the lamb in large pieces of about 1 to 2”. Place them in a plastic bag and season them with salt and pepper. Shake to coat.

In a deep large roasting pan, melt the lard and drop in the lamb. Let it brown quickly on all sides. Sprinkle some flour on the meat and then the rest of the ingredients.

Cook on low heat, covered for at least 40 minutes adding more wine if necessary. Serve with polenta and sprinkle some parsley on top.
